I'm not really well versed in Canadian history, but from what I understand, various areas have been named after Scottish explorers, most notably Nova Scotia ("New Scotland") not to mention the French.
Scottish, French, English, Welsh, Irish, German (New Brunswick), Spanish, Dutch, plus the Natives.
Then came the Ukrainians, Polish, Hungarians, Austrians, Belgians, Italians, Russians, Chinese, Japanese, Africans, Arabs, Jews...
Except if I made a faction for every ethnicity that emigrated to Canada, then nothing in that rp would get done ever.

Well, I would say that the major ethnicities depend on the region. On the East Coast, it's mostly Celtic and Acadian. In Québec, mostly French and those from French colonies. In Ontario, it's a mashup, but mostly British, with a huge number of various racial minorities. On the Prairies, Eastern European. On the West Coast, British and Chinese. In the North, Inuit. The aboriginals are everywhere, of course, but make up a small minority.
Well, going by the Roman idea, and mating it with the more character-driven "D&D" style of G-Tech/Astro: Canada (as well as Mexico and possibly extending to Greenland, the Caribbean, and the rest of Central and South America) is territory occupied by the Holy American Empire. There is free travel among the Imperial States, with all Men within the Empire considered equals regardless of their origins - Only Slaves and the "Barbarians" from outside the Empire are considered inferior. This way, our characters can be from anywhere with whatever background we want, even if the "Empire" is restricted to only a relatively small area (the Atlantic coast, for instance).
And yes, it physically hurt to type "Canada is territory occupied by America".
Doesn't have to be every ethnicity. Just the ones with major concentrations, like the Chinese in Vancouver and Ukrainians in central Canada. Amerinidians would be food for the Quebecois, and everyone else would be too mixed to actually for ethnic enclaves. Hell, we could throw in a Hutterite nation, while we're at it, which would be regularly harassed by Canuck Cossacks. :3

I could probably think up a few, but I'd prefer others to contribute because then we'd get a bigger diversity of ideas.

How about the PCs wander into the strange land of Enessjee, and have to battle trolls and somehow make it out of the chaos?

Okay, so, here's what we have so far:
A character-driven roleplay in which a band of misfits from all corners of life are called upon by someone (possibly The Grand High Pubaa Himself) to go on some sort of quest, structured in a way that will allow them to engage in various side-quests along the way. This RP will take place in either a mystical land call Enessjee, or just post-apunkalyptic America. Tech level is either standard Fantasy, or Modern/Future.
This all sounds rather cool so far. When it comes to the side-quests, if every player character has a personal side-quests related to their own goals (think of the Loyalty Missions from Mass Effect 2), that would give a fair amount of side-quest content - From there, it's whatever else we can think of as they come along, including quests in individual towns and villages.
Don't you think that would be a bit of a mess to keep organized?
I don't think so. I imagine the entirety of the PCs will move from place to place as a group even if they split off into separate parties within those locations.
Eh... I still feel as though having only one "land" would be easier to handle - Make it Enessjee with Ankh Mauta as either a continent or Kingdom (or both!), that way we can literally do whatever we feel like without worrying about anything resembling real life.
Not saying we wouldn't do that anyway, but still...
