Since we missed Earth Day a couple of weeks ago, we will now be presenting our Fifth Annual Earth Day Taco. In keeping with tradition, this event will remain an entirely vegetarian breakfast. The Head Chef is always up for a challenge and this week is no different. This brand new one is just for you, Texas! Fresh ideas from the fresh minds at The Big Tex Happy Taco Stands of NewTexas! First, we take the freshest, brightest green broccoli we grow right here in NewTexas and steam it up in our industrial-sized hoppers until it is super tender and tasty. The NewTexas Abuelas then apply thier fierce knife skills to it so that it is broken down to the perfect taco filling size. At the same time, NewTexas Happy Taco Stands Tías start scrambling up billions, upon billions, of the farm-fresh, pasture-raised, organic hen house, Grade AA Large brown eggs with a touch of dijon mustard and hot sauce for a little kick. When they are just about done, they gently fold in the broccoli florets and finish them off by slapping a heaping-helping into a hand-made flour tortilla, made by certified Texas Abuelitas with love. The kicker, and finishing touch, is we add a generous handful of Texas-made, vegetarian-friendly, fresh mozzarella cheese and seal it up all quick and simple. Woo, good stuff and good for you.

Today's Special Salsa is not actually salsa, but in keeping it green and earthy, we present - Guacamole - mashed avocados, diced tomatoes, diced onions, diced mild jalapeños, a touch of garlic, a touch of cilantro, a pinch of salt, and a squeeze of lime. A sealed cup of our own freshly prepared, fully vegetarian, NewTexas Happy Taco Stands Pico de Gallo is also included for those who want a little kick in their Earth Day. The taco is hermetically sealed in a Stay-Warm® pouch that is wrapped in the same ol' aluminum foil we are all so familiar with for our breakfast taco. We are trying to keep it real, peeps. Since it is an Earth Day celebration, we will send a disposable thermos of an Earth Day special Funky Stuff - the Green Goblin - a Limeade, Mango, Spinach, and Avacado Smoothie! For your standard beverage accompaniment, a packet of Sanka, Tang and a Lipton Tea bag will be included with every delivery as well as salt and pepper and a napkin. Yes, it is different, but it works and you do not even have to leave your residence. Woo! And, watch out for the drones! Start your day off the right way; munch out and go back to sleep.
