Banana Split Cake Recipe <3


- 1 Cup Butter - 1/2 cup milk - 4 eggs - 1 teaspoon vanilla - 3 cups all purpose flour - 1/2 strawberry preserves - 2 teaspoons baking powder - a few drops of red food coloring
- 1 teaspoon salt - 1/2 presweetened cocoa powder (not low calorie) - 1/4 teaspoon baking soda - 1 1/2 cups sugar - 1/2 mashed ripe banana (large) - 1/2 cup dairy sour cream
- 1 12-ounce jar of fudge ice cream topping - Vanilla Ice Cream


1. Allow Butter and Eggs to sit in room temperature for 30 minutes. Meanwhile, grease and flour a 10-inch fluted tube pan. In a medium bowl, stir together the flour, baking powder, salt, and baking soda; set aside.

2. In a large mixing bowl, beat butter with an electric mixer on low to medium speed for ~30 seconds. Add sugar; beat until fluffy. Add eggs 1 at a time, beating well after each addition. In a small bowl, combine banana, sour cream, milk, and vanilla. Alternately add flour mixture and banana mixture to butter mixture, beating on low speed after each addition just until combined.

3. Stir 1/2 strawberry preserves and red food coloring into 1 cup of the batter. Stir cocoa powder into another 1 cup of the batter. Spoon half the remaining batter into prepared pan. Spoon strawberry batter over. Top with remaining plain, then chocolate batter.

4. Bake in 350F/175C for 55 to 65 minutes. Cool in a pan for 10 minutes; remove from pan and cool completely on wire rack. In a small saucepan heat ice cream topping until warm. Drizzle over cake. Serve cake with ice cream topped with additional chocolate fudge topping. Makes 12 servings.
