Pobair


A pobair [lit. baked (pobas) & roll (bair)] is a street food that contains various fillings and spices baked inside a flaky pastry shell. It is traditionally filled with ground beef, or with ground mutton, and fillings also include chicken, vegetables, fish and cheese. Most of the time, coloured dots are used to indicate the filling(s):

  • none: beef

  • red: spicy beef

  • green: vegetarian

Ingredients

pastry:
  • 2 cups of flour

  • half a teaspoon of salt

  • 1 cup of shortening

  • 1 cup of water

  • 1 teaspoon of tumeric

  • half a cup of milk

  • curry powder [optional]

filling:

  • 900g ground beef

  • thyme

  • 1 teaspoon of paprika

  • breadcrumbs

  • 1 teaspoon of soy sauce

  • 50g of spring onions

  • 1 teaspoon of salt

How to make

pastry: 1. sift flour, turmeric , curry powder, salt & knead in shortening | 2. add water, & knead for two minutes | 3. roll the pastry to about 0.3cm thick | 4. cut the pastry round 15cmm (for extra crust flakiness, brush with shortening, fold & roll again - do this 3 times) | 5. divide the filling between the pastries & brush edges with water | 6. fold & seal glaze with milk | 7. bake in oven for about 25 minutes at 230°C, or until golden brown
filling: 1. grind spring onions, & add soy sauce | 2. add the mixture to ground beef, & add salt | 3. add the thyme, paprika, & breadcrumbs to the beef, & cook for twenty minutes | 4. remove & leave it to cool
