What do you mean?
If you mean the name of your nation, then that can't be changed. For example, I can change the "Dominion" part of my country's long name but I can't change the "Stormaen" bit.
To change the "Dominion" bit – or "Empire" bit in your case – just go to your settings page:

Unfortunately, there's no 'undo' or revert feature (yet, anyway).

Can you switch the Nation classification to nothing? For example from the Empire of Lutsen o Lutsen.
Nope. Once you hit a certain population mark you can change it to say "The Grand Amazing Empire of Lutsen," e.g., but there will always be "____ of" Lutsen in front of your nation's name.
I suppose you could put a simple "-"?
You could maybe try the nestuL fo of Lutsen for that funky mirror-universe thing?
