I'm not a huge fan of cheese, but I readily acknowledge its importance to humanity. Did you know Greece is the country that eats the most cheese? More than double the amount of the U.S.

It's per capita. Am I supposed to like blue cheeses and squeaky cheeses? I'm gonna have a hard time with those.

Yes, perhaps there are a few weak links when comes to cheese but when you consider how many great ones there are, that redeemes the others and then some.

On their own, perhaps, some cheeses do not fare as well as others in the mouth, but each has its good use. Mozzarella is terrible in your mac and cheese, but perfect on a pizza for example. I have found that Blue cheese can work well melted on gamey bison burgers. To each their own, however.

I was recently converted over to the concept of cheese at breakfast by the Europeans. Savory breakfast is not really done in the U.S., but I like it now.
